Ask a Filipino what home tastes like and sinigang is usually the answer. It is a hot, sour broth built on sampalok, unripe tamarind, filled with vegetables and one main protein. The sourness is the point: it cuts through Dubai heat the way it cuts through Manila heat, and it is the first thing a homesick kabayan orders. Our kitchen souring is real tamarind, and the broth is made fresh through the day.

Which one should you order?

  • Sinigang na Hipon, AED 47: whole prawns in the sour broth. The sweetness of the shrimp against the tamarind is the classic pairing.
  • Sinigang na Bangus, AED 49: milkfish, the everyday sinigang of Filipino households. Soft, rich belly meat that takes the broth well.
  • Sinigang na Tanigue, AED 51: Spanish mackerel steaks, firmer fish for people who want a meatier bowl.
  • Sinigang na Baka, AED 53: beef, simmered until it gives up. The heaviest and most warming of the four.
  • Pesang Bangus, AED 45: not a sinigang. Pesa is the gentle cousin, milkfish in a ginger broth with cabbage and bok choy, for days when you want comfort without the sour.

What makes a sinigang good

Two things. First, the souring agent: sampalok gives a rounded, fruity acidity that powdered mixes flatten. Second, timing: the vegetables go in stages so the kangkong still has bite when the bowl lands. A sinigang that arrives with everything boiled to the same softness was made in a hurry.
